Heather’s Homemade Chicken Salad

You will love this chicken salad as a snack or as a meal.

Chicken salad is great any time of year.  Whether you eat it as a salad or in a sandwich, you can’t beat good chicken salad.  Lowes Foods makes incredible chicken salad.  They make one of my favorites, and their recipe was the inspiration behind my own creation.  However, I think my homemade chicken salad served with a croissant is the best.

From start to finish, this recipe will take approximately 45 minutes.

Ingredients
For Chicken
1 – 1.5 lbs. chicken breast
1 pkg. McCormick Grill Mates Garlic, Herb, and Wine Marinade
1/4 cup olive oil
1/4 cup water
1 tbsp. balsamic vinegar

For Salad
4 cups chicken, diced
1 stalk celery, cut into 1/4-inch dice
4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
1 1/2 tsp finely chopped fresh dill
2 tbsp finely chopped parsley
1 cup halved red grapes (optional)
1/2 cup chopped pecans (optional)
1/2 – 3/4 cup Dukes mayonnaise
2 tsp strained freshly squeezed lemon juice
1 tsp Dijon mustard
Kosher salt
Freshly ground black pepper

Directions
Marinate chicken as directed on the marinade package.
Prepare chicken on stove top or on grill.
When chicken is cooked and cooled, dice.

In a mixing bowl, toss together the chicken, grapes, nuts, celery, scallions and herbs. Set aside.
In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste.
Add to the chicken and mix gently until combined.
Refrigerate until ready to serve.
