There is nothing about potatoes I don’t like. In the spirit of Forrest Gump, I like potato cakes, baked potatoes, mashed potatoes, smashed potatoes, hash browns, tater tots, roasted red potatoes, potato soup, and the list goes on and on.
This is one of my favorite potato recipes when I need comfort food. This potato bake pairs well with any entree or as a main dish. If you are a potato lover, then you are in for a treat when you make this simple and delicious recipe.
From start to finish, this recipe will take approximately 1 hour 15 minutes.
3 – 4 cups red potatoes cut into bite-sized pieces
1 red bell pepper cut into bite-sized pieces
1 small white onion cut into bite-sized pieces
1 cup sliced mushrooms
1-2 tbsp fresh rosemary chopped roughly
salt and pepper to taste
1-2 tbsp olive oil
3/4 cup grated cheese of choice
Preheat oven to 350 degrees.
Spread potatoes, peppers, onions, and mushrooms in baking dish greased with Pam.
Drizzle olive oil over the vegetables.
Sprinkle with salt, pepper, and rosemary.
Bake for 55 minutes.
Remove dish and sprinkle cheese over vegetables.
Place dish back into the oven until cheese melts completely – about 5 minutes.
