Coconut Balls

Mom says the secret to these coconut balls is to make sure your pecans are chopped extremely well..

It just isn’t Christmas without Coconut Balls.  I love Mounds and Almond Joy candy bars, and these little delights are better than either one.  My mother has been making coconut balls for as long as I can remember.  Like Chex Mix, Fonda’s Fantasy Fudge, and Peanut Butter Balls, Coconut Balls are a fixture during the holiday season.

If coconut is your thing, then you must make these little jewels!

From start to finish, this recipe will take approximately 1 hour 15 minutes.

Ingredients

2 lbs. confectioner’s sugar
1/2 lb. softened margarine (2 sticks)
1 can Eagle Brand sweetened condensed milk
1 lg. bag coconut flakes
1 cup pecans chopped very fine

1 bag semi-sweet chocolate morsels
1/2 bar paraffin wax

Directions

Mix first set of ingredients.
Roll into quarter-sized balls.
Freeze until firm.
Melt chocolate and paraffin in double boiler until smooth.
Dip balls in chocolate
Cool on wax paper.
