Dixie Peanut Brittle

Looks good enough to eat!

This recipe comes from Melanie Honeycutt, another DPI Region 7 gal that I have had the opportunity to get to know over the past few months.  When Melanie told me she had a good recipe for peanut brittle, and I heard folks raving about it, I knew I just had to have it — and here it is!

From start to finish, this recipe will take approximately 35 minutes.

Melanie Honeycutt, queen of Instructional Technology and Peanut Brittle!

Ingredients

1 1/2 cups raw shelled peanuts with skins
1 cup granulated sugar
1/2 cup light corn syrup
1/8 tsp salt
1 tsp butter
1 tsp vanilla extract
1 tsp of baking soda

Directions

Combine peanuts, sugar, syrup and salt in 2 1/2 quart plastic microwave-safe bowl.
Microwave on high (700 watt) for 4 minutes, stir, microwave on high for 4 more minutes.
Stir in butter and vanilla; then, microwave on high for 2 minutes.
Add baking soda, and quickly stir until light and foamy.
Immediately pour onto lightly greased baking sheet, and spread to 1/4 inch thickness.
Let cool then break apart.
Store in airtight container.
Takes about 20 minutes to cool.
