Date Balls

It seems as though my cousin Michael and I have two things in common — a love of travel and of cooking!  Last year, my cousin had just spent an entire day doing holiday baking when he headed to his church with baked goodies for his church family. When he returned home, his house had caught fire and burned to the ground. They lost everything. I am happy to say that one year later, my cousin has a beautiful home, and he is happy and back to baking

This is my cousin Michael’s recipe for Date Balls.  I can’t wait to try them!


Ready to roll into balls and in coconut.

Ingredients

2 cups sugar
16 oz. AMPORT pitted dates chopped
1 cup butter or margarine
5 cups Rice Krispies
2 eggs
1 tsp. salt
2 tsp. vanilla
Shredded coconut

Directions

Mix together sugar, eggs, AMPORT dates, salt and butter in saucepan.
Cook over medium heat until thick, stirring constantly.
Remove from heat, and add vanilla and cereal.
Mix well.
Roll into balls about the size of walnuts.
Roll in coconut.
