Sweet Potato Casserole

Sweet Potato Casserole is perfect as a dessert or served with a meal.

Whenever I think of Sweet Potato Casserole, I immediately recall warm memories of family gatherings, laughter, and delicious Southern comfort food. Although I have had enjoyed many different Sweet Potato Casserole recipes over the years, this recipe is my favorite. Again, I steal my best recipes, and this one belongs to Lori Pendry, my sister-in-law. It has become a staple at Pendry holiday gatherings.
I love this recipe because it is easy, delicious, and not nearly as bad for you as most delicious desserts.
From start to finish, this recipe will take you about 1 hour 50 minutes.
Sweet potatoes need to cook 1 hour.
The casserole bakes for 30 minutes.
Prep time is about 20 minutes.

The crunchy topping is the perfect pair to the delicious sweet potato base.

3 cups mashed sweet potatoes
1 cup granulated sugar
1/2 tsp salt
1 1/2 tsp vanilla extract
1/2 cup milk
2 eggs
1/3 stick melted margarine
1/2 tsp. cinnamon
1/2 tsp nutmeg (optional)

1 cup brown sugar
1 cup chopped pecans
1/3 cup all-purpose flour
1/3 stick melted margarine

Wash and bake sweet potatoes in a baking pan for 1 hour at 500 degrees.
Remove peel and mash 3 cups of sweet potatoes.
Sift sugar and salt and add all other ingredients.
Stir well.
Pour into greased baking dish

For Topping
Combine all ingredients until well mixed.
Crumble over sweet potato mixture.
Bake at 350 degrees for 30-40 minutes.
