Spicy Chicken Fajita Quesadillas

These quesadillas are easy to make, and they are absolutely delicious.

I love Mexican food, and one of the quickest, easiest and most delicious takes on a Mexican classic is my Spicy Chicken Fajita Quesadillas. When you are expecting friends for an informal meal, this is a great recipe to make as you can maximize your visit and still enjoy a delicious meal. This dish pairs well with my Guacamole Especial and Black Beans Especial.
From start to finish, this recipe will take you about 30 minutes.

Ready to serve

1 lb chicken breast or chicken breast strips (can use shrimp or beef)
2 tbsp olive oil
1 tbsp minced garlic
1/2 green bell pepper cut into strips
1/2 sliced red or white onion cut into strips
1/4 cup sliced mushrooms (optional)
1/4 cup drained Ro-Tel tomatoes or Jack’s Medium Salsa
1 pkg. McCormack seasoning for Fajitas
1/2 cup water
1/8 cup fresh chopped cilantro (optional)

Large flour tortillas
Mexican shredded cheese or Queso shredded cheese
Sour Cream
Guacamole (optional)
Jack’s Medium Salsa

Perfect portions are made simple with the pizza slicer.

Heat oil in a large skillet.
Season chicken with salt and pepper.
Add chicken and cook until done, turning as needed.
Remove chicken from heat.
Add vegetables and garlic to remaining oil and cook until cooked through.
Meanwhile, cut chicken (or beef) into bite-sized pieces on a cutting board.
Add meat back to vegetables, and add McCormack seasoning and up to 1/2 cup water as needed.
Follow recipe on the package for simmering directions. (About 5-10 minutes covered)

Meanwhile, heat a griddle to 350 degrees.
Grease with Pam right before adding tortilla, cheese, chicken mixture, and more cheese.
Cook on each side for about 3-4 minutes until all cheese is melted and tortillas are golden.

Use a pizza cutter to slice quesadilla to serve.
Serve with salsa, sour cream, and guacamole.

    I LOVE a great quesadillas, but I am always nervous to make them at my home for some strange reason. Now with your recipe, I think I will make a winner. Nice post.
