Everybody wants a little more pea salad.
At Thanksgiving this year, I was introduced to Maw Maw Madge’s Pea Salad. I can tell you this…Looks can be deceiving! This cold salad is delicious and is best served with comfort foods like Fonda’s Chicken Casserole
, Picnic Pulled Barbecue
, or Roasted Chicken and Vegetables
. The best thing about this salad is that it gets better the longer it marinates. Once you try it, you will know what I mean. My dear friend Gina passed this recipe on to me, and I am passing it on to you.
From start to finish, this recipe will take you about 10 minutes
Allow this recipe to marinate for 24 hours
1 can French green beans (drained)
1 can baby peas (drained)
1 jar diced pimentos (drained)
1 medium onion finely chopped
3/4 cup sugar
1 cup white vinegar
1/2 cup olive oil
salt and pepper to taste
Gently combine all ingredients in a bowl until sugar is dissolved.
