Jalapenos Buenos

Jalapenos Buenos are perfect companions to a cold pale ale and a warm, sunny afternoon.

Jennifer Griffin makes absolutely delicious stuffed Jalapeno peppers. These spicy treats are a great prelude to any meal. Jennifer shares that there are several secrets to making perfect peppers.
#1 – Buy large jalapenos. Jennifer says the larger peppers are a bit milder.
#2 – Be sure to remove all seeds. Seeds harbor a great deal of the fire in the peppers.
#3 – The longer these peppers cook, the milder the taste.
From start to finish, this recipe will take you about 45 minutes.

Filling the peppers with the cheese mixture

1 cup shredded Monterey Jack cheese
1 cup shredded Colby or Cheddar cheese
8 oz. cream cheese (softened)
1/4 – 2/3 cup crumbled bacon
1/2 tsp chili powder
1/4 tsp Kosher salt
1/4 tsp garlic powder
1/8 tsp cumin
12 large Jalapeno peppers cut lengthwise in half and seeded.
1 tsp paprika for garnish (optional)

Ready to eat!

Preheat oven to 350 degrees.
Mix all ingredients except paprika.
Scoop cheese mixture into peppers.
Garnish with paprika.
Bake 30 minutes.
Serve hot.
