Flax Seed Muffins

My friend John is an incredible cook. Here he is choosing the perfect wine at Highway 12 in Sonoma, CA. Good times!

My friend John Hyatt makes incredible flax seed muffins.  He inspired me to follow in his footsteps.  This recipe is quite similar to his.  The great thing about flax seed muffins is that they are moist and delicious without oil, so they are low in fat and very high in fiber and vitamins.  They are delicious for breakfast, a snack, or even a dessert.

From start to finish, this recipe will take you about 40-45 minutes.

Ingredients
1 2/3 cups unbleached flour
1 1/4 cups flax seed meal
1/4 cup oat bran
1 cup brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3-4 tbsp. ground cinnamon to taste
1 1/2 cups shredded carrots
2 apples peeled and finely chopped
1/2 cup raisins
3/4 cup milk
3 eggs lightly beaten
1 tsp vanilla flavoring
Optional (nutmeg, ginger, and cloves to taste)

These muffins are moist, healthy, and delicious.

Directions

Preheat oven to 350 degrees.
Mix dry ingredients.
Add wet ingredients.
Spray muffin cups with Pam.

Fill cups 3/4 full.
Bake 15-20 minutes.
