Dockside Shrimp with Spicy Cocktail Sauce

I eat a lot of shrimp. I love shrimp!

One of the easiest and best ways to enjoy shrimp is simply to boil them. The secret, however, is to boil them for just the RIGHT amount of time with the right seasonings.

A 3-1 ketchup'horseradish ratio makes for a spicy cocktail sauce.

When we make cocktail sauce here down by the water, people swoon! Seriously! People love the cocktail sauce and beg for the recipe, especially Jennifer Griffin!

It is so easy that I am almost embarrassed to share. But…it is super good!

The horseradish you choose is crucial to a great sauce.

The secret is GOOD ground horseradish and Heinz ketchup.

From start to finish, this recipe will take less than 10 minutes.

Ingredients for the Shrimp
1-2 lbs. large easy peel shrimp
1 1/2 – 2 tbsp. Old Bay

Bring 2 – 2 1/2 quarts of water and Old Bay to a rolling boil. Add shrimp. Set kitchen timer for 5 minutes. With 30 seconds left, remove shrimp from heat.

Adding ice stops the cooking process and keeps your shrimp cooked to perfection.

At the 5 minute mark, dump contents into a colander, and immediately cover with ice. Let stand for 15-30 minutes before serving.

You may want to sprinkle Old Bay lightly on shrimp before serving.

Ingredients for Cocktail Sauce
Warning: We like it HOT. If you do not like it hot, you will need to cut WAY back on the Horseradish!
(For each pound of shrimp, you will need the following.)
1 tbsp GOOD ground horseradish (NOT cream-based horseradish)
3 tbsp ketchup

In a great cocktail sauce, you should be able to see the horseradish.

Mix ketchup and horseradish to taste.
Enjoy with shrimp.
