Fish Tacos

I had the best fish tacos at Charleston’s Starfish Grille.  The restaurant is on Folly Road in Charleston.  After having their tacos, I had to try to make my own.  Theirs are very different from mine, but both are really good!  Here is my version!

From start to finish, this recipe will take you about 30 minutes.

Heather's Fish Tacos

1 ½ pound Tilapia
Kosher Salt
Fresh Ground Pepper
Old Bay
Olive Oil

2-2 1/2 cups shredded lettuce
1 Avocado
½ cup of fresh cilantro
1/4 cut red onion
1 tbsp olive oil
Juice of 1 fresh ;ime

3 Roma tomatoes
Shredded cheese
Sour cream
Ranch dressing (It’s best if you make your own!)

Tortillas  (corn or flour)

Sprinkle Kosher Salt, Fresh Ground Pepper, Cumin and Old Bay over Tilapia to taste.
Heat 2  ½ tablespoons of olive oil in a non-stick skillet.
Add fish turning once until cooked through (about 5-7 minutes).

Meanwhile, in a medium bowl toss  2 to 2 ½ cups of shredded lettuce, ½ cup chopped cilantro, one diced avocado, juice of one freshly squeezed lime, 1 tbsp olive oil, ¼ cup of diced red onion, and kosher salt to taste.

Chop Roma tomatoes.

Fill shells with fish, shredded cheese, lettuce mixture, tomatoes, sour cream, and ranch.
