I was inspired to make these meatballs when Jennifer Griffin told me how much her family loved turkey meatballs. I created my own recipe after checking out several recipes online. They turned out great. My neighbor, Ali Siverly, LOVES these. As a matter of fact, she provided the photos for this recipe when she made turkey meatballs at her house.
1 lb. ground turkey
1/4 cup chopped fresh parsley
2 tbsp. minced onion or 1/4 cup chopped onion
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp oregano
1 egg beaten
1/3-1/2 sleeve Zesta crackers crushed
1-1 1/2 tbsp minced garlic
Preheat oven to 350 degrees.
Mix all meatball ingredients and form into balls.
Cook at 350 degrees for 30 minutes.
Return to oven until cheese melts — approximately 5 minutes.
