Black Bean Soup

This healthy choice is full of flavor!

This is yet another delicious recipe from my dear friend, Kevin Eakes. Back when we used to be running partners, Kevin would whip this treat up for us to enjoy after an afternoon of running.

From start to finish, this recipe will take you about 40-45 minutes.

10 pieces dry sundried tomatoes
1 tbsp olive oil
1 1/2 cups chopped red onion
3 cloves freshly minced garlic
1/2 tsp cayenne pepper
1 tsp cumin
2 cans unsalted diced tomatoes (undrained)
2 cans black beans (undrained)
1/2 cup coarsely chopped cilantro
tortilla chips
sour cream
shredded cheese of choice 

Boil sundried tomatoes in water for 3-4 minutes. Remove from heat and chop.
Saute onions, garlic, and cayenne in oil. Stir frequently.
When onions become translucent, add cumin, tomatoes, and beans.
Bring to boil.
Reduce heat, cover, and simmer for 20 minutes. Stir frequently.
Add sundried tomatoes. Cook 10 more minutes.
Stir in cilantro and remove from heat.
Pour 1/2 of mixture into blender or food processor.
Return to pot and stir.
Serve with cheese, sour cream, and tortilla chips.
